Did you see the lineup of motors these dudes were running back then, WOW, they were having some fun. I don't know what would be more fun/practical, running a V-drive setup with a two blade prop, or just going with a jet drive. One thing about the jet, where I live there is trash (tree branches, logs, etc) in the water on the river if it rains like hell, and branches can nick up a nice expensive prop. The jet would just blast over em (I suppose). When we're on the water after a rain, we're always on the lookout for floating debris, it's a fact of life on the river. I'd love to build one of my 427s for duty like that, with aluminum heads, whhhhoopoooooooooohooooooo. Even a SBC would be a blast, probably go faster than I'd want to.

The jet drives are real popular down here.
Texas rivers and lakes are ntoroiously full of trash. I have friends that have trashed a transoms by having submerged logs smash into the lower unit.
I've always wanted to build one of those boats.
Of course, my version would have the biggest blower I could find sticking out of the back.
