How come the tq curve starts so high then dips down?

This was done on a brand new, shiny SuperFlow Dyno.
What he did was load the dyno to hold the car back, gun the throttle, then hit the release button on his handy little touchscreen remote. It held the car @ 2500 rpm's until he released it, then she took off.
500+ft-lbs @ 2500 rpms. sweeeet 
All #'s are DynoJet corrected and ran with 91 octane gas.

hows the grass fires looking now I saw 6 deaths so far and a 700 car back up on 40 sucks man
