If you fo the 5.0 route, just be aware of all the necessary changes, moreso if you plan to make it EFI. Either way, there may be some really important changes you'll want to make.
They all had the 7.5" rear back then, so try not to overpower that. If you leave it in, you may as well keep it as a one wheel wonder. There was no dual exhaust then either, so a new cross member will be needed if you want true dual exhaust. While at that, a stronger trans should be in order, and you'll need at least to adapt it with a new bell housing and an adapted pilot bearing(donno what the size is).
The fuel pump will need replacement(assuming it doesn't already have an intank min. 88lpr pump in it). At that age, I wouldn't expect it to have an intank pump. A holley blue +regulator is inexpensive and will work if you use a carb.
Other than that, you'll need to look into a new fan, motor mounts and other small pieces to make the swap. I'd also add an MSD ignition system, minus the distributor if you find a 5.0 with one installed. The factory 5.0 dist. works well. You can use a simple unit, like the 6al or even a Mallory, if you can find one.
